Cocoa powder is a product created when chocolate mass is pressed to remove its cocoa butter. This process separates a portion of the cocoa butter and the remainder of the mass called "cocoa cake" is pulverised.
This Ecuadorian cocoa, which is referred to as one of the highest quality, has an exceptional taste and aroma. It is made from unroasted cocoa beans of the Arriba Nacional variety in RAW quality.
BIO = Organic quality
This is not a Dutch cocoa that has been alkalized, because this method reduces the amount of healthy antioxidants - flavonoids contained in cocoa.
NOTE: During the production and processing of the offered cocoa products (mass, butter, powder), the temperature does not exceed 42 degrees Celsius.
